Here’s another item from our flat that is particularly pleasing us this week!:
They had a recipe for Cauliflower Couscous which we didn’t actually follow – but combined it with several other recipes from the internet to come up with this simple version:
Soften some onions (1/2 an onion), grate the cauliflower head so it looks like fluffy snow (use about 3/4 of the head for two people if you’re a bit greedy), toast a few nuts, add the grated cauliflower and a handful of sultanas to the softened onions, bit of salt and pepper and cook for about 3 or 4 mins. Add the nuts, some chopped parsley and squeeze half a lemon over – done!
So far we’ve had it with sausages and rice, fish and potatoes and also lamb (not all together obviously).
